ADJARULI KACHAPURI

While there is more to Adjarian cuisine than their khachapuri, no food-list is complete without it. Served with fresh egg and a generous serving of butter on top, this is a one of a kind cheese boat that is fabulously tasty if cooked right. Make sure to give it the respect it deserves by trying it at proper bakeries/restaurants and not your commercialized chain franchises — as delightful of a dish that it is, more times than not I have ended up drawing the short-end of the stick, ordering it at establishments that have no clue what they are doing. 

Wondering why it has that special shape? Some speculate it has a boat form for the fact it originates in the coastal region. The egg is said to represent the sun, forever shining. As it rains more often than not in Adjara, perhaps its was a bit of wishful thinking from the creators!

Wondering how to eat it? If you ordered the regular thick-dough version (as opposed to the thin-edge crusty), then tear off the edges and scoop out the egg and cheese- work your way from the outside in. We don't suggest you order a side-dish as this will very quickly fill you up and will most likely fuel you for the rest of the day!
